Description
A creamy and savory pasta dish featuring tender chicken, sun-dried tomatoes, and fresh spinach over spaghetti.
Ingredients
- 8 oz spaghetti
- 2 boneless skinless chicken breasts, sliced
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 3 cups fresh spinach
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
- Cook spaghetti according to package directions until al dente. Drain and set aside.
- Season chicken slices with salt and pepper. In a large skillet, heat olive oil over medium-high heat and cook chicken until golden and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add garlic and sun-dried tomatoes. Cook for 1 minute until fragrant.
- Pour in heavy cream and chicken broth, stirring to combine. Bring to a simmer.
- Add Parmesan cheese and stir until melted and sauce thickens slightly, about 2 minutes.
- Add fresh spinach and cook until wilted, about 2 minutes.
- Return chicken to skillet and toss with sauce. Add cooked spaghetti and toss to coat evenly.
- Serve hot, garnished with extra Parmesan if desired.
Notes
You can customize the seasonings to taste. For a lighter version, use half-and-half instead of heavy cream.
