Description

A quick and flavorful pasta dish featuring al dente spaghetti tossed with sautéed garlic, fresh spinach, and a hint of red pepper flakes. Perfect for a light weeknight dinner.


Ingredients

  • 8 oz spaghetti
  • 3 tablespoons olive oil
  • 4 cloves garlic, thinly sliced
  • 1/4 teaspoon red pepper flakes (optional)
  • 5 oz fresh spinach
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Bring a large pot of salted water to a boil. Cook spaghetti according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; cook 1-2 minutes until fragrant, stirring constantly to avoid burning.
  3. Add spinach to the skillet in handfuls, tossing until wilted, about 2-3 minutes. Season with salt and pepper.
  4. Add drained spaghetti to the skillet with the spinach mixture. Toss to combine, adding reserved pasta water a little at a time to create a light sauce. Cook 1-2 minutes.
  5. Serve immediately, topped with Parmesan cheese if desired.

Notes

You can customize the seasonings to taste. For extra protein, add cooked chicken or shrimp along with the spinach.
