Description

A quick and flavorful pasta dish featuring spaghetti tossed with sautéed garlic, fresh spinach, and a hint of red pepper flakes. Perfect for a weeknight dinner.


Ingredients

  • 12 ounces spaghetti
  • 1/4 cup olive oil
  • 6 cloves garlic, thinly sliced
  • 1/2 teaspoon red pepper flakes
  • 10 ounces fresh spinach, stems removed
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Optional: lemon zest for garnish


Instructions

  1. Cook spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  3. Add spinach to the skillet in batches, stirring until wilted, about 2-3 minutes. Season with salt and black pepper.
  4. Add the drained spaghetti to the skillet, tossing to combine. If needed, add reserved pasta water a little at a time to loosen the sauce.
  5. Remove from heat, stir in Parmesan cheese, and adjust seasonings. Garnish with lemon zest if desired. Serve immediately.

Notes

You can customize the seasonings to taste. For extra protein, add cooked shrimp or grilled chicken. Use whole wheat spaghetti for a healthier option.
