Fluffy, chewy strawberry cookies with a creamy cheesecake center that melts in your mouth.
Ingredients
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup freeze-dried strawberries, crushed
- 4 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon lemon juice
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt. In another bowl, beat butter and granulated sugar until fluffy, then mix in egg and vanilla. Gradually add dry ingredients to form a dough, then fold in crushed strawberries.
- For the filling, beat cream cheese, powdered sugar, and lemon juice until smooth. Roll into small balls (about 1 teaspoon each).
- Take a tablespoon of cookie dough, flatten slightly, place a cream cheese ball in the center, and wrap dough around it. Place on baking sheet, spacing 2 inches apart.
- Bake for 12-15 minutes until edges are lightly golden. Let cool on sheet for 5 minutes, then transfer to a wire rack.
