Ingredients
- 4 medium sweet potatoes, scrubbed
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 tablespoon olive oil

Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pierce sweet potatoes with a fork and rub with 2 tablespoons olive oil. In a small bowl, mix 1 teaspoon smoked paprika, 1/2 teaspoon cumin, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Sprinkle this spice mix evenly over the sweet potatoes. Place on the prepared baking sheet and roast for 45-55 minutes, until tender when pierced with a fork. Let cool slightly.
- While sweet potatoes roast, pat the chickpeas dry with a paper towel. In a bowl, toss chickpeas with 1 tablespoon olive oil, 1 teaspoon smoked paprika, 1/2 teaspoon chili powder, and 1/4 teaspoon salt. Spread on a separate baking sheet and roast for 20-25 minutes, shaking the pan halfway through, until crispy.
- For the drizzle: In a small bowl, whisk together honey, lime juice, lime zest, and cayenne pepper. Set aside.
- When sweet potatoes are cool enough to handle, slice them in half lengthwise. Using a fork, lightly score the flesh and fluff it up. Sprinkle with a pinch of salt if desired.
- To serve, place sweet potato halves on a platter, top with crispy chickpeas, drizzle with the spicy lime honey, and garnish with cilantro and feta if using. Serve warm.
