Description

These smoky roasted sweet potato boats are stuffed with crispy spiced chickpeas and finished with a zesty spicy lime honey drizzle. A perfect balance of sweet, smoky, and spicy flavors, making a hearty and nutritious main or side dish.


Ingredients

  • 4 medium sweet potatoes, scrubbed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1/2 teaspoon lime zest
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 2 tablespoons chopped fresh cilantro (for garnish)
  • 1/4 cup crumbled feta cheese (optional)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pierce sweet potatoes with a fork and rub with 2 tablespoons olive oil. In a small bowl, mix 1 teaspoon smoked paprika, 1/2 teaspoon cumin, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Sprinkle this spice mix evenly over the sweet potatoes. Place on the prepared baking sheet and roast for 45-55 minutes, until tender when pierced with a fork. Let cool slightly.
  3. While sweet potatoes roast, pat the chickpeas dry with a paper towel. In a bowl, toss chickpeas with 1 tablespoon olive oil, 1 teaspoon smoked paprika, 1/2 teaspoon chili powder, and 1/4 teaspoon salt. Spread on a separate baking sheet and roast for 20-25 minutes, shaking the pan halfway through, until crispy.
  4. For the drizzle: In a small bowl, whisk together honey, lime juice, lime zest, and cayenne pepper. Set aside.
  5. When sweet potatoes are cool enough to handle, slice them in half lengthwise. Using a fork, lightly score the flesh and fluff it up. Sprinkle with a pinch of salt if desired.
  6. To serve, place sweet potato halves on a platter, top with crispy chickpeas, drizzle with the spicy lime honey, and garnish with cilantro and feta if using. Serve warm.
