Description
Tender beef cooked low and slow in a rich garlic butter sauce with potatoes, creating a comforting and flavorful one-pot meal.
Ingredients
- 2 lbs beef chuck roast, cut into 1-inch cubes
- 1 lb baby potatoes, halved
- 1/2 cup unsalted butter, melted
- 8 cloves garlic, minced
- 1 cup beef broth
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley for garnish
Instructions
- Place beef cubes and halved potatoes in the slow cooker.
- In a bowl, mix melted butter, minced garlic, beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour over the beef and potatoes.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until beef is tender.
- Stir gently to coat everything in the sauce. Garnish with fresh parsley before serving.
