Description

Tender beef cooked low and slow in a rich garlic butter sauce with potatoes, creating a comforting and flavorful one-pot meal.


Ingredients

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 1 lb baby potatoes, halved
  • 1/2 cup unsalted butter, melted
  • 8 cloves garlic, minced
  • 1 cup beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and black pepper to taste
  • 2 tbsp chopped fresh parsley for garnish


Instructions

  1. Place beef cubes and halved potatoes in the slow cooker.
  2. In a bowl, mix melted butter, minced garlic, beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour over the beef and potatoes.
  3. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until beef is tender.
  4. Stir gently to coat everything in the sauce. Garnish with fresh parsley before serving.
