Ingredients
- 4 bone-in, skin-on chicken thighs
- 1.5 pounds baby potatoes, halved
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Season chicken thighs generously with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium-high heat and sear chicken thighs skin-side down until golden, about 4 minutes per side.
- Place halved baby potatoes, chopped onion, and minced garlic in the slow cooker.
- Arrange seared chicken thighs on top of the potatoes.
- Sprinkle dried thyme and rosemary over everything.
- Pour chicken broth around the sides of the slow cooker.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender and potatoes are cooked through.
- Garnish with fresh parsley before serving.
Notes
You can customize the seasonings to taste. For a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the slow cooker during the last 30 minutes of cooking.
