Ingredients

  • 1 lb sea scallops, patted dry
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • For the sauce:
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons honey
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon lime zest
  • Salt to taste


Instructions

  1. In a small bowl, whisk together lime juice, cilantro, honey, garlic, olive oil, lime zest, and salt to make the sauce. Set aside.
  2. Season the scallops with salt and pepper on both sides.
  3. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering.
  4. Add scallops in a single layer; cook for 2-3 minutes per side until golden brown and cooked through.
  5. Remove scallops from skillet and drizzle with the lime cilantro sauce. Serve immediately.

Notes

You can customize the seasonings to taste. For extra heat, add a pinch of red pepper flakes to the sauce.
