Pan-seared scallops with a bright and zesty lime cilantro sauce, perfect for a quick yet elegant dinner.
Ingredients
- 1 lb large sea scallops, patted dry
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1/4 cup fresh lime juice
- 1/4 cup chopped fresh cilantro
- 1 teaspoon honey
- Salt and pepper to taste
- Lime wedges for garnish
Instructions
- Season scallops with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add scallops to the skillet in a single layer, searing for 2-3 minutes per side until golden brown and just cooked through. Remove scallops and set aside.
- Reduce heat to medium, add butter and garlic to the skillet, and sauté for 30 seconds until fragrant.
- Stir in lime juice, honey, and cilantro, and let the sauce simmer for 1-2 minutes until slightly thickened.
- Return scallops to the skillet, tossing gently to coat with the sauce. Serve immediately with lime wedges.
Notes
You can customize the seasonings to taste. For extra heat, add a pinch of red pepper flakes with the garlic.
