Description

Fresh and vibrant lettuce boats filled with a zesty shrimp and avocado mixture, topped with a creamy lime dressing. A perfect light meal or appetizer.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeno, seeded and minced
  • 1 lime, juiced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 1 head butter lettuce or romaine, leaves separated


Instructions

  1. In a bowl, combine shrimp with olive oil, chili powder, cumin, salt, and pepper. Toss to coat.
  2. Heat a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and opaque. Remove from heat and let cool slightly.
  3. In a large bowl, gently combine diced avocado, red onion, cilantro, jalapeno, and lime juice. Season with salt.
  4. Chop the cooked shrimp into bite-sized pieces and add to the avocado mixture. Stir gently to combine.
  5. Spoon the shrimp-avocado mixture into lettuce leaves. Serve immediately, optionally with extra lime wedges.

Notes

You can customize the seasonings to taste. For extra heat, add more jalapeno or a dash of hot sauce.
