Description

Light, fresh, and full of flavor, these Shrimp Avocado Lettuce Boats are a perfect low-carb appetizer or main dish. Juicy seasoned shrimp meets creamy avocado in crisp lettuce cups, finished with a tangy lime dressing.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 head butter lettuce or romaine hearts, leaves separated
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Juice of 2 limes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced red onion
  • 1 jalapeño, seeded and minced (optional)


Instructions

  1. In a small bowl, whisk together lime juice, olive oil, minced garlic, chili powder, cumin, salt, and pepper. Set aside half for dressing.
  2. Toss the shrimp in the remaining lime mixture and let marinate for 10 minutes.
  3. Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until pink and opaque. Remove from heat and let cool slightly.
  4. In a separate bowl, gently combine diced avocado, red onion, cilantro, and jalapeño (if using). Drizzle with the reserved dressing and toss lightly.
  5. To assemble, place a lettuce leaf on a plate. Spoon a portion of avocado mixture into the center, then top with 3-4 cooked shrimp.
  6. Serve immediately, optionally garnished with extra cilantro or a squeeze of lime.

Notes

You can customize the seasonings to taste. For a spicier kick, add cayenne or extra jalapeño. Shrimp can be grilled instead of pan-seared for a smoky flavor.
