Light, fresh, and full of flavor, these Shrimp Avocado Lettuce Boats are a perfect low-carb appetizer or main dish. Juicy seasoned shrimp meets creamy avocado in crisp lettuce cups, finished with a tangy lime dressing.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 head butter lettuce or romaine hearts, leaves separated
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- Juice of 2 limes
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced red onion
- 1 jalapeño, seeded and minced (optional)
Instructions
- In a small bowl, whisk together lime juice, olive oil, minced garlic, chili powder, cumin, salt, and pepper. Set aside half for dressing.
- Toss the shrimp in the remaining lime mixture and let marinate for 10 minutes.
- Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until pink and opaque. Remove from heat and let cool slightly.
- In a separate bowl, gently combine diced avocado, red onion, cilantro, and jalapeño (if using). Drizzle with the reserved dressing and toss lightly.
- To assemble, place a lettuce leaf on a plate. Spoon a portion of avocado mixture into the center, then top with 3-4 cooked shrimp.
- Serve immediately, optionally garnished with extra cilantro or a squeeze of lime.
Notes
You can customize the seasonings to taste. For a spicier kick, add cayenne or extra jalapeño. Shrimp can be grilled instead of pan-seared for a smoky flavor.
