Description

Light and refreshing lettuce boats filled with seasoned shrimp and creamy avocado, perfect for a low-carb meal or appetizer.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 head butter lettuce or romaine lettuce leaves
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste


Instructions

  1. In a skillet, heat olive oil over medium heat. Add garlic and cook until fragrant, about 1 minute.
  2. Add shrimp, chili powder, cumin, salt, and pepper. Cook until shrimp are pink and opaque, about 3-4 minutes.
  3. Remove from heat and let cool slightly. Drizzle with lime juice and toss with cilantro.
  4. In a bowl, gently combine diced avocado with a pinch of salt and a squeeze of lime juice.
  5. To assemble, place a spoonful of avocado mixture into each lettuce leaf, then top with shrimp.
  6. Serve immediately as a light main course or appetizer.

Notes

You can customize the seasonings to taste. For extra heat, add a pinch of cayenne pepper or red pepper flakes.
