Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 head butter lettuce, leaves separated
- 1 lime, juiced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Add shrimp and garlic, cooking for 3-4 minutes until shrimp are pink and cooked through. Season with salt and pepper.
- In a bowl, combine diced avocado, red onion, cilantro, and lime juice. Gently mix to coat the avocado.
- Spoon the avocado mixture into the lettuce leaves, then top each with cooked shrimp.
- Serve immediately, optionally garnished with extra cilantro or lime wedges.
