Light and refreshing lettuce boats filled with seasoned shrimp, creamy avocado, and fresh vegetables, perfect for a quick lunch or appetizer.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 head butter lettuce, leaves separated
- 1/2 red onion, finely chopped
- 1 lime, juiced
- 2 tbsp olive oil
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a bowl, toss shrimp with olive oil, chili powder, salt, and pepper.
- Heat a skillet over medium-high heat and cook shrimp for 2-3 minutes per side until pink and cooked through. Set aside to cool slightly.
- In another bowl, combine diced avocado, red onion, and lime juice. Gently mix to coat.
- To assemble, place a spoonful of the avocado mixture into each lettuce leaf, top with cooked shrimp, and garnish with fresh cilantro.
