Description

Light and refreshing lettuce boats filled with seasoned shrimp, creamy avocado, and fresh vegetables, perfect for a quick lunch or appetizer.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 head butter lettuce, leaves separated
  • 1/2 red onion, finely chopped
  • 1 lime, juiced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. In a bowl, toss shrimp with olive oil, chili powder, salt, and pepper.
  2. Heat a skillet over medium-high heat and cook shrimp for 2-3 minutes per side until pink and cooked through. Set aside to cool slightly.
  3. In another bowl, combine diced avocado, red onion, and lime juice. Gently mix to coat.
  4. To assemble, place a spoonful of the avocado mixture into each lettuce leaf, top with cooked shrimp, and garnish with fresh cilantro.
