Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 ripe avocado, diced
- 1 head butter lettuce, leaves separated
- 1/4 cup red onion, finely chopped
- 1 lime, juiced
- 2 tbsp fresh cilantro, chopped
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Add shrimp and season with garlic powder, salt, and pepper. Cook for 2-3 minutes per side until pink and opaque.
- In a bowl, combine diced avocado, red onion, cilantro, and lime juice. Gently mix to coat.
- Place a spoonful of the avocado mixture into each lettuce leaf, then top with cooked shrimp.
- Serve immediately, optionally garnished with extra cilantro or a lime wedge.
