Description

Fresh, zesty grilled shrimp and creamy avocado are served in crisp lettuce cups with a lime-cilantro dressing, making a light yet satisfying meal.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 2 ripe avocados, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 2 tbsp mayonnaise
  • 1 head butter lettuce or romaine leaves, separated


Instructions

  1. In a bowl, toss shrimp with olive oil, paprika, garlic powder, salt, and pepper. Let marinate for 10 minutes.
  2. Heat a grill or skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and opaque. Set aside to cool slightly.
  3. In a small bowl, whisk together lime juice, honey, mayonnaise, and a pinch of salt to make the dressing.
  4. In a large bowl, gently combine avocado, red onion, cilantro, jalapeño, and half of the dressing. Add shrimp and mix lightly.
  5. Spoon the shrimp-avocado mixture into lettuce cups. Drizzle with remaining dressing. Serve immediately.

Notes

You can customize the seasonings to taste. For a dairy-free version, use vegan mayonnaise or Greek yogurt substitute.
