Description
Fresh, zesty grilled shrimp and creamy avocado are served in crisp lettuce cups with a lime-cilantro dressing, making a light yet satisfying meal.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 2 ripe avocados, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced
- 2 tbsp lime juice
- 1 tbsp honey
- 2 tbsp mayonnaise
- 1 head butter lettuce or romaine leaves, separated
Instructions
- In a bowl, toss shrimp with olive oil, paprika, garlic powder, salt, and pepper. Let marinate for 10 minutes.
- Heat a grill or skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and opaque. Set aside to cool slightly.
- In a small bowl, whisk together lime juice, honey, mayonnaise, and a pinch of salt to make the dressing.
- In a large bowl, gently combine avocado, red onion, cilantro, jalapeño, and half of the dressing. Add shrimp and mix lightly.
- Spoon the shrimp-avocado mixture into lettuce cups. Drizzle with remaining dressing. Serve immediately.
Notes
You can customize the seasonings to taste. For a dairy-free version, use vegan mayonnaise or Greek yogurt substitute.
