Description

Pan-seared sea scallops are served in a luxurious saffron cream sauce with a hint of white wine and shallots. This elegant dish is perfect for a special dinner, offering a delicate balance of sweet scallops and aromatic, velvety sauce.


Ingredients

  • 1 lb large sea scallops, patted dry
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 shallot, finely chopped
  • 1/2 cup dry white wine
  • 1 cup heavy cream
  • 1/4 teaspoon saffron threads
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon chopped fresh chives (for garnish)


Instructions

  1. Season the scallops with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Place scallops in the skillet, making sure not to crowd them. Sear for 2-3 minutes per side until golden brown and cooked through. Remove scallops from the skillet and set aside.
  3. Reduce heat to medium and add butter to the same skillet. Once melted, add shallot and cook until softened, about 2 minutes.
  4. Pour in white wine and scrape up any browned bits from the bottom of the pan. Simmer until the wine is reduced by half, about 3 minutes.
  5. Stir in the heavy cream and saffron threads. Reduce heat to low and let the sauce simmer gently for 5 minutes to infuse the saffron flavor, stirring occasionally.
  6. Add lemon juice and season with salt and pepper to taste.
  7. Return the scallops to the skillet and spoon the sauce over them. Heat for 1 minute.
  8. Serve immediately, garnished with chopped chives.

Notes

You can customize the seasonings to taste. For a richer flavor, substitute half of the cream with crème fraîche. Ensure the scallops are thoroughly dried before searing to achieve a nice crust.
