Description

A quick and flavorful side dish that pairs perfectly with any protein. Fresh spinach and earthy mushrooms are sautéed in garlic and olive oil until tender, finished with a squeeze of lemon for brightness.


Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 8 oz cremini mushrooms, sliced
  • 10 oz fresh baby spinach
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon lemon juice


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.
  2. Add sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until they release their moisture and start to brown.
  3. Add spinach in handfuls, stirring until wilted. Continue adding all spinach and cook for 2-3 minutes.
  4. Season with salt, black pepper, and red pepper flakes (if using). Cook for another minute.
  5. Remove from heat, drizzle with lemon juice, stir, and serve immediately.

Notes

You can customize the seasonings to taste. For extra flavor, add a splash of soy sauce or balsamic vinegar. Also works well with Swiss chard or kale.
