Description

Roasted Veggie Sheet Pan Mix is a colourful medley of seasonal vegetables tossed in olive oil and herbs, then roasted to perfection on a single sheet pan. It’s an easy, healthy, and versatile side dish that pairs well with any main course.


Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large red onion, cut into wedges
  • 1 medium zucchini, sliced into half-moons
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper, to taste


Instructions

  1. Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper or lightly grease it.
  2. In a large bowl, combine broccoli, cauliflower, bell pepper, red onion, and zucchini.
  3. Drizzle with olive oil and sprinkle with garlic powder, Italian herbs, salt, and pepper. Toss until vegetables are evenly coated.
  4. Spread vegetables in a single layer on the prepared sheet pan.
  5. Roast in the preheated oven for 25-30 minutes, or until vegetables are tender and edges are lightly browned, stirring halfway through.
  6. Remove from oven and serve hot.

Notes

You can customize the seasonings to taste. Feel free to add other vegetables like carrots, Brussels sprouts, or sweet potatoes. Ensure they are cut to similar sizes for even roasting.
