Tender roasted sweet potato rounds drizzled with honey and topped with salty feta cheese – a perfect balance of sweet and savory.
Ingredients
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/4 cup crumbled feta cheese
- 2 tablespoons honey
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss sweet potato rounds with olive oil, salt, pepper, and smoked paprika until evenly coated.
- Arrange the rounds in a single layer on the prepared baking sheet. Roast for 20 minutes, then flip each round and roast for another 10–15 minutes until golden and tender.
- Transfer to a serving platter, sprinkle with crumbled feta, drizzle with honey, and garnish with parsley if desired. Serve warm.
