Description

A simple yet elegant side dish featuring sweet potato rounds roasted until tender, then topped with creamy feta cheese and a drizzle of honey for a sweet and savory flavor combination.


Ingredients

  • 2 large sweet potatoes, peeled and sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons honey
  • Fresh thyme leaves for garnish (optional)


Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the sweet potato rounds with olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
  3. Arrange the rounds in a single layer on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway through, until tender and lightly browned.
  4. Remove from the oven and sprinkle the crumbled feta cheese over the warm sweet potato rounds.
  5. Drizzle with honey and garnish with fresh thyme leaves if desired. Serve immediately.
