Ingredients
- 2 large sweet potatoes, peeled and sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese
- 2 tablespoons honey
- Fresh thyme leaves for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the sweet potato rounds with olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
- Arrange the rounds in a single layer on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway through, until tender and lightly browned.
- Remove from the oven and sprinkle the crumbled feta cheese over the warm sweet potato rounds.
- Drizzle with honey and garnish with fresh thyme leaves if desired. Serve immediately.
