Description

A sweet and creamy breakfast or snack featuring fluffy whipped ricotta on toasted bread, topped with warm roasted strawberries for a burst of flavor.


Ingredients

  • 1 cup fresh strawberries, hulled and halved
  • 1 tablespoon honey
  • 1 teaspoon balsamic vinegar
  • 1 cup whole milk ricotta cheese
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 4 slices thick-cut bread (such as brioche or sourdough)
  • Fresh mint leaves for garnish (optional)


Instructions

  1. Preheat oven to 400°F (200°C). Toss strawberries with honey and balsamic vinegar on a baking sheet. Roast for 15-20 minutes until soft and juicy.
  2. In a food processor or bowl, combine ricotta, powdered sugar, and vanilla. Whip until smooth and fluffy, about 1-2 minutes.
  3. Toast the bread slices until golden and crisp.
  4. Spread a generous layer of whipped ricotta on each toast. Top with roasted strawberries and drizzle with any remaining juices from the pan.
  5. Garnish with fresh mint if desired and serve immediately.
