A sweet and creamy breakfast or snack featuring fluffy whipped ricotta on toasted bread, topped with warm roasted strawberries for a burst of flavor.
Ingredients
- 1 cup fresh strawberries, hulled and halved
- 1 tablespoon honey
- 1 teaspoon balsamic vinegar
- 1 cup whole milk ricotta cheese
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- 4 slices thick-cut bread (such as brioche or sourdough)
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Toss strawberries with honey and balsamic vinegar on a baking sheet. Roast for 15-20 minutes until soft and juicy.
- In a food processor or bowl, combine ricotta, powdered sugar, and vanilla. Whip until smooth and fluffy, about 1-2 minutes.
- Toast the bread slices until golden and crisp.
- Spread a generous layer of whipped ricotta on each toast. Top with roasted strawberries and drizzle with any remaining juices from the pan.
- Garnish with fresh mint if desired and serve immediately.
