Description

A sweet and creamy breakfast or brunch treat featuring roasted strawberries over fluffy whipped ricotta on toasted bread.


Ingredients

  • 1 cup fresh strawberries, hulled and halved
  • 2 tablespoons honey, divided
  • 1 teaspoon balsamic vinegar
  • 1 cup whole milk ricotta cheese
  • 1/4 teaspoon vanilla extract
  • 4 slices thick-cut bread (such as brioche or sourdough)
  • 1 tablespoon olive oil
  • Pinch of sea salt
  • Fresh mint leaves for garnish (optional)


Instructions

  1. Preheat oven to 400°F (200°C). Toss strawberries with 1 tablespoon honey and balsamic vinegar on a baking sheet. Roast for 15-20 minutes until softened and juicy.
  2. While strawberries roast, combine ricotta, remaining 1 tablespoon honey, and vanilla extract in a bowl. Whip with a whisk or hand mixer until light and fluffy, about 2-3 minutes.
  3. Toast bread slices until golden and crisp. Brush lightly with olive oil if desired.
  4. Spread a generous layer of whipped ricotta on each toast. Top with roasted strawberries and a pinch of sea salt.
  5. Garnish with fresh mint leaves if using. Serve immediately.
