Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup roasted red peppers, chopped
- 2 cups fresh spinach, roughly chopped
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Toothpicks (for securing)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add garlic and spinach, cooking until spinach is wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a bowl, combine the roasted red peppers, cooked spinach, mozzarella, Italian seasoning, salt, and pepper.
- Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
- Stuff each chicken breast with the spinach and pepper mixture, then secure the opening with toothpicks.
- Place stuffed chicken breasts in a baking dish. Drizzle with a little olive oil and season with extra salt and pepper if desired.
- Bake for 25-30 minutes, or until chicken is cooked through (internal temperature reaches 165°F).
- Let rest for 5 minutes before removing toothpicks and serving.
Notes
You can customize the seasonings to taste. For extra flavor, add a sprinkle of Parmesan cheese on top before baking.
