Ingredients
- 4 boneless skinless chicken breasts
- 1 cup roasted red peppers, chopped
- 2 cups fresh spinach, chopped
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/4 cup chicken broth
Instructions
- Preheat oven to 400°F (200°C).
- In a skillet over medium heat, add olive oil and sauté garlic for 1 minute. Add spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
- In a bowl, combine roasted red peppers, cooked spinach, mozzarella cheese, salt, pepper, oregano, and paprika.
- Cut a pocket into the side of each chicken breast, being careful not to cut all the way through. Stuff each breast with the pepper-spinach mixture, then secure with toothpicks if needed.
- Place stuffed chicken breasts in a baking dish. Pour chicken broth around them.
- Bake for 25-30 minutes, or until chicken is cooked through and juices run clear.
- Let rest for 5 minutes before serving. Remove toothpicks if used.
Notes
You can customize the seasonings to taste. For extra flavor, top with additional shredded mozzarella during the last 5 minutes of baking.
