Description

Tender roasted carrots tossed in garlic butter and topped with a creamy, tangy lemon feta sauce for a vibrant side dish.


Ingredients

  • 1 lb carrots, peeled and cut into sticks
  • 3 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 4 oz feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp olive oil
  • Fresh parsley, chopped for garnish


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix melted butter, minced garlic, thyme, salt, and pepper. Toss carrots in the mixture until coated.
  3. Spread carrots in a single layer on the baking sheet. Roast for 25-30 minutes, flipping halfway, until tender and caramelized.
  4. While carrots roast, blend feta, Greek yogurt, lemon juice, lemon zest, and olive oil in a food processor until smooth. Add a splash of water if needed for consistency.
  5. Transfer roasted carrots to a serving platter. Drizzle with lemon feta sauce and garnish with fresh parsley. Serve warm.
