Description

A sweet-savory appetizer featuring toasted baguette slices topped with creamy whipped brie, jammy roasted cherries, and a drizzle of hot honey infused with fresh thyme.

Ingredients

  • 1 baguette, sliced 1/2-inch thick on the bias
  • 2 cups fresh cherries, pitted and halved
  • 8 oz brie, rind removed, at room temperature
  • 2 tbsp heavy cream
  • 2 tbsp unsalted butter, melted
  • 2 tbsp extra-virgin olive oil
  • 2 tsp fresh thyme leaves, plus sprigs for garnish
  • 3 tbsp hot honey
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly cracked black pepper
  • Flaky sea salt, for finishing

Instructions

  1. Preheat oven to 400F. Arrange baguette slices on a baking sheet, brush with melted butter and a little olive oil, and toast 8-10 minutes until golden and crisp. Set aside.
  2. Toss pitted cherry halves with 1 tbsp olive oil, kosher salt, and black pepper on a separate baking sheet. Roast 12-15 minutes until softened and slightly jammy. Remove and let cool slightly.
  3. Meanwhile, whip the room-temperature brie with heavy cream using a hand mixer or food processor until smooth, light, and spreadable, about 2 minutes.
  4. Stir the remaining olive oil into the hot honey along with the fresh thyme leaves.
  5. Spread a generous layer of whipped brie onto each toasted baguette slice, spoon roasted cherries on top, and finish with a drizzle of hot honey thyme and a pinch of flaky sea salt. Garnish with thyme sprigs and serve immediately.
