Description

A delightful twist on classic bruschetta, featuring sweet roasted cherries, creamy whipped brie, and a spicy-sweet hot honey thyme drizzle on crispy toasted baguette slices.


Ingredients

  • 2 cups fresh cherries, pitted and halved
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme leaves, plus more for garnish
  • Salt and black pepper to taste
  • 1 baguette, sliced into 1/2-inch thick rounds
  • 2 tablespoons olive oil, for brushing
  • 8 ounces brie cheese, rind removed and softened
  • 1/4 cup heavy cream
  • 1/4 cup hot honey
  • 1 tablespoon unsalted butter
  • 1 sprig fresh thyme, for infusing


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss the cherries with 1 tablespoon olive oil, balsamic vinegar, 1 teaspoon thyme leaves, salt, and pepper. Spread in a single layer on the prepared baking sheet.
  3. Roast the cherries for 15-20 minutes, until softened and slightly caramelized. Set aside to cool slightly.
  4. While cherries roast, prepare the baguette slices. Brush both sides lightly with olive oil and arrange on a separate baking sheet. Toast in the oven for 5-7 minutes until golden and crisp. Set aside.
  5. In a food processor, combine the softened brie and heavy cream. Blend until smooth and creamy, scraping down as needed. Season with a pinch of salt.
  6. In a small saucepan, combine the hot honey, unsalted butter, and a sprig of fresh thyme. Warm over low heat for 3-4 minutes to infuse. Remove the thyme sprig.
  7. To assemble, spread a generous layer of whipped brie on each toasted baguette slice. Top with roasted cherries.
  8. Drizzle with the hot honey thyme mixture and garnish with fresh thyme leaves. Serve immediately.

Notes

You can customize the seasonings to taste. For a more savory flavor, add a pinch of red pepper flakes to the cherries before roasting.
