A delightful combination of sweet roasted carrots, creamy whipped ricotta, and spicy hot honey for a perfect starter or side dish.
Ingredients
- 1 lb carrots, peeled and halved lengthwise
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1 cup whole milk ricotta cheese
- 2 tablespoons heavy cream
- 1 tablespoon honey
- 1 teaspoon red pepper flakes
- 1 tablespoon apple cider vinegar
- Fresh parsley or thyme for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss carrots with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender and caramelized.
- In a small bowl, combine ricotta, heavy cream, and a pinch of salt. Whisk until smooth and creamy.
- For the hot honey: In a small saucepan, heat honey and red pepper flakes over low heat for 2 minutes. Remove from heat and stir in apple cider vinegar.
- Spread whipped ricotta on a serving plate. Arrange roasted carrots on top. Drizzle with hot honey and garnish with fresh herbs.
- Serve warm or at room temperature.
Notes
You can customize the seasonings to taste. Add more red pepper flakes for extra heat.
