Description

A delightful combination of sweet roasted carrots, creamy whipped ricotta, and spicy hot honey for a perfect starter or side dish.


Ingredients

  • 1 lb carrots, peeled and halved lengthwise
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 cup whole milk ricotta cheese
  • 2 tablespoons heavy cream
  • 1 tablespoon honey
  • 1 teaspoon red pepper flakes
  • 1 tablespoon apple cider vinegar
  • Fresh parsley or thyme for garnish


Instructions

  1. Preheat oven to 400°F (200°C). Toss carrots with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender and caramelized.
  2. In a small bowl, combine ricotta, heavy cream, and a pinch of salt. Whisk until smooth and creamy.
  3. For the hot honey: In a small saucepan, heat honey and red pepper flakes over low heat for 2 minutes. Remove from heat and stir in apple cider vinegar.
  4. Spread whipped ricotta on a serving plate. Arrange roasted carrots on top. Drizzle with hot honey and garnish with fresh herbs.
  5. Serve warm or at room temperature.

Notes

You can customize the seasonings to taste. Add more red pepper flakes for extra heat.
