Description

Sweet, caramelized roasted carrots are served over a bed of creamy, whipped ricotta, finished with a drizzle of spicy-sweet hot honey and a sprinkle of fresh herbs. This elegant yet simple dish balances earthy, creamy, and tangy flavors, making it a perfect appetizer or side for any meal.


Ingredients

  • 1 1/2 pounds carrots, peeled and halved lengthwise (or left whole if thin)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup whole milk ricotta cheese
  • 2 tablespoons heavy cream
  • 1/2 teaspoon lemon zest
  • 2 tablespoons hot honey (or regular honey plus a pinch of cayenne)
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon chopped fresh parsley
  • Flaky sea salt, for finishing


Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss the carrots with olive oil, kosher salt, and black pepper on the prepared baking sheet. Arrange them in a single layer, ensuring they are not overcrowded.
  3. Roast the carrots for 25–30 minutes, flipping once halfway through, until they are tender and caramelized at the edges.
  4. While the carrots roast, make the whipped ricotta. In a food processor or using a hand mixer, blend the ricotta, heavy cream, and lemon zest until smooth and fluffy, about 2 minutes. Season with a pinch of salt.
  5. Spread the whipped ricotta evenly on a serving platter, creating a slight swirl.
  6. Arrange the roasted carrots on top of the ricotta.
  7. Drizzle generously with the hot honey, then sprinkle with the chives, parsley, and flaky sea salt. Serve immediately.

Notes

You can customize the seasonings to taste. For a milder heat, reduce the amount of hot honey or opt for regular honey with a tiny pinch of cayenne. Try adding fresh thyme or rosemary with the carrots for an extra layer of flavor.
