Ingredients
- 1 1/2 pounds carrots, peeled and halved lengthwise (or left whole if thin)
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 cup whole milk ricotta cheese
- 2 tablespoons heavy cream
- 1/2 teaspoon lemon zest
- 2 tablespoons hot honey (or regular honey plus a pinch of cayenne)
- 1 tablespoon chopped fresh chives
- 1 tablespoon chopped fresh parsley
- Flaky sea salt, for finishing
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss the carrots with olive oil, kosher salt, and black pepper on the prepared baking sheet. Arrange them in a single layer, ensuring they are not overcrowded.
- Roast the carrots for 25–30 minutes, flipping once halfway through, until they are tender and caramelized at the edges.
- While the carrots roast, make the whipped ricotta. In a food processor or using a hand mixer, blend the ricotta, heavy cream, and lemon zest until smooth and fluffy, about 2 minutes. Season with a pinch of salt.
- Spread the whipped ricotta evenly on a serving platter, creating a slight swirl.
- Arrange the roasted carrots on top of the ricotta.
- Drizzle generously with the hot honey, then sprinkle with the chives, parsley, and flaky sea salt. Serve immediately.
Notes
You can customize the seasonings to taste. For a milder heat, reduce the amount of hot honey or opt for regular honey with a tiny pinch of cayenne. Try adding fresh thyme or rosemary with the carrots for an extra layer of flavor.
