Sweet, spicy, and creamy roasted carrots served over a bed of whipped ricotta, drizzled with hot honey for a perfect balance of flavors.
Ingredients
- 1 lb carrots, peeled and halved lengthwise
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup whole milk ricotta
- 2 tbsp heavy cream
- 1 tbsp honey
- 1/2 tsp red pepper flakes
- 1 tbsp hot honey (for drizzling)
- Fresh thyme leaves for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Toss carrots with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender and caramelized, flipping halfway.
- In a food processor, combine ricotta, heavy cream, honey, and red pepper flakes. Blend until smooth and creamy.
- Spread the whipped ricotta on a serving plate.
- Arrange the roasted carrots on top of the ricotta.
- Drizzle with hot honey and garnish with fresh thyme leaves.
