Description

Sweet, spicy, and creamy roasted carrots served over a bed of whipped ricotta, drizzled with hot honey for a perfect balance of flavors.


Ingredients

  • 1 lb carrots, peeled and halved lengthwise
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup whole milk ricotta
  • 2 tbsp heavy cream
  • 1 tbsp honey
  • 1/2 tsp red pepper flakes
  • 1 tbsp hot honey (for drizzling)
  • Fresh thyme leaves for garnish


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss carrots with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender and caramelized, flipping halfway.
  3. In a food processor, combine ricotta, heavy cream, honey, and red pepper flakes. Blend until smooth and creamy.
  4. Spread the whipped ricotta on a serving plate.
  5. Arrange the roasted carrots on top of the ricotta.
  6. Drizzle with hot honey and garnish with fresh thyme leaves.
