A delightful combination of sweet, spicy, and creamy flavors. Perfectly roasted carrots are served over a bed of smooth whipped ricotta and drizzled with hot honey, creating a vibrant and satisfying dish.
Ingredients
- 1½ pounds carrots, peeled and halved lengthwise
- 3 tablespoons olive oil
- Salt and freshly ground black pepper to taste
- 1 cup whole milk ricotta cheese
- 2 tablespoons heavy cream
- ½ teaspoon fresh lemon zest
- ⅓ cup hot honey (store-bought or homemade)
- Fresh parsley or thyme for garnish
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Place the halved carrots on the prepared baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly. Spread them in a single layer.
- Roast the carrots for 25–30 minutes, flipping halfway through, until they are tender and lightly caramelized on the edges.
- Meanwhile, make the whipped ricotta: In a small food processor or bowl, combine the ricotta, heavy cream, and lemon zest. Blend or whisk until smooth and creamy. Season with a pinch of salt.
- Spread the whipped ricotta onto a serving platter, creating a swoosh or even layer.
- Arrange the roasted carrots on top of the ricotta. Drizzle generously with hot honey.
- Garnish with fresh parsley or thyme leaves. Serve warm or at room temperature.
Notes
You can customize the seasonings to taste. For more heat, add chili flakes to the honey or serve extra hot honey on the side.
