A delightful side dish where sweet roasted carrots are served over creamy whipped ricotta and drizzled with spicy hot honey, creating a perfect balance of flavors.
Ingredients
- 1 bunch of carrots, trimmed and peeled
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup ricotta cheese
- 2 tablespoons heavy cream
- 1 tablespoon grated Parmesan cheese
- 2 tablespoons honey
- 1 teaspoon red pepper flakes
- 1 tablespoon apple cider vinegar
- Fresh thyme for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss peeled carrots with olive oil, salt, and pepper. Spread on a baking sheet.
- Roast carrots for 25-30 minutes until tender and caramelized, turning once halfway through.
- While carrots roast, combine ricotta, heavy cream, Parmesan, and a pinch of salt in a food processor. Blend until smooth and creamy.
- In a small saucepan, combine honey, red pepper flakes, and apple cider vinegar. Heat over low heat for 3-4 minutes until warm and slightly thickened.
- Spread whipped ricotta on a serving platter. Top with roasted carrots and drizzle with hot honey. Garnish with fresh thyme and serve.
