Description
Sweet and spicy roasted carrots are paired with creamy whipped ricotta and a drizzle of hot honey for a delicious appetizer or side dish.
Ingredients
- 1 lb carrots, peeled and halved lengthwise
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup whole milk ricotta cheese
- 2 tablespoons heavy cream
- 1 teaspoon lemon zest
- 2 tablespoons hot honey
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C).
- Toss carrots with olive oil, salt, and pepper. Spread on a baking sheet in a single layer.
- Roast for 25-30 minutes, flipping halfway, until tender and slightly caramelized.
- Meanwhile, in a food processor, combine ricotta, heavy cream, and lemon zest. Process until smooth and creamy. Season with salt to taste.
- Spread the whipped ricotta onto a serving plate.
- Arrange roasted carrots on top of the ricotta.
- Drizzle with hot honey and garnish with fresh parsley if desired.
- Serve warm or at room temperature.
