Description

Sweet and spicy roasted carrots are paired with creamy whipped ricotta and a drizzle of hot honey for a delicious appetizer or side dish.


Ingredients

  • 1 lb carrots, peeled and halved lengthwise
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup whole milk ricotta cheese
  • 2 tablespoons heavy cream
  • 1 teaspoon lemon zest
  • 2 tablespoons hot honey
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss carrots with olive oil, salt, and pepper. Spread on a baking sheet in a single layer.
  3. Roast for 25-30 minutes, flipping halfway, until tender and slightly caramelized.
  4. Meanwhile, in a food processor, combine ricotta, heavy cream, and lemon zest. Process until smooth and creamy. Season with salt to taste.
  5. Spread the whipped ricotta onto a serving plate.
  6. Arrange roasted carrots on top of the ricotta.
  7. Drizzle with hot honey and garnish with fresh parsley if desired.
  8. Serve warm or at room temperature.
