Ingredients
- 3 medium beets, peeled and cubed
- 2 ripe pears, thinly sliced
- 4 cups mixed greens
- 1/2 cup crumbled goat cheese
- 1/4 cup chopped walnuts
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon honey
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Toss cubed beets with 1 tablespoon olive oil, salt, and pepper, then roast on a baking sheet for 25-30 minutes until tender. Let cool.
- In a small bowl, whisk together remaining olive oil, balsamic vinegar, honey, salt, and pepper to make the vinaigrette.
- Arrange mixed greens on a platter, top with roasted beets, pear slices, goat cheese, and walnuts. Drizzle with vinaigrette and serve immediately.
