Description
Elegant, layered stacks of roasted beets, creamy blue cheese, and fresh pear slices, drizzled with a sweet-tangy balsamic glaze for a stunning appetizer or light meal.
Ingredients
- 3 medium beets, peeled and sliced into 1/4-inch rounds
- 1 ripe but firm pear, thinly sliced
- 4 oz blue cheese, crumbled
- 1/2 cup balsamic vinegar
- 2 tbsp honey
- 2 tbsp olive oil
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
- Fresh arugula for serving
Instructions
- Preheat oven to 400°F (200°C). Toss beet slices with olive oil, salt, and pepper, then roast on a baking sheet for 25-30 minutes until tender. Let cool.
- In a small saucepan, simmer balsamic vinegar and honey over medium heat until reduced by half and syrupy, about 10 minutes. Set aside to cool slightly.
- On serving plates, layer roasted beet slices, pear slices, and blue cheese crumbles into towers, repeating until ingredients are used.
- Drizzle each tower with balsamic glaze, sprinkle with thyme leaves, and serve over a bed of fresh arugula.
