Ingredients
- 4 medium red beets, scrubbed and trimmed
- 4 ounces blue cheese, crumbled
- 2 ripe pears, thinly sliced
- 1/4 cup balsamic glaze
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh arugula for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Wrap each beet in aluminum foil and place on a baking sheet. Roast for 45-60 minutes until fork-tender.
- Let beets cool slightly, then peel off skins using a paper towel. Slice into 1/4-inch rounds.
- On a serving plate, layer a beet slice, top with a pear slice, and sprinkle blue cheese. Repeat layers to form a tower, using about 3-4 layers per tower.
- Drizzle with balsamic glaze and season with salt and pepper. Garnish with fresh arugula if desired.
