Description

A simple and flavorful side dish featuring tender asparagus and sweet carrots roasted to perfection with garlic and herbs.


Ingredients

  • 1 pound asparagus, trimmed
  • 1 pound carrots, peeled and cut into sticks
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 1 tablespoon lemon juice (optional)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine asparagus, carrots, olive oil, garlic, thyme, rosemary, salt, and pepper. Toss to coat evenly.
  3. Spread vegetables in a single layer on the prepared baking sheet. Roast for 20-25 minutes, stirring halfway through, until tender and slightly caramelized.
  4. Remove from oven and drizzle with lemon juice if desired. Serve warm.

Notes

You can customize the seasonings to taste. For extra crunch, add a sprinkle of toasted almonds before serving.
