A simple and healthy side dish featuring tender-crisp asparagus and sweet carrots, roasted to perfection with olive oil and garlic.
Ingredients
- 1 bunch asparagus, trimmed
- 4 medium carrots, peeled and cut into matchsticks
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine asparagus, carrots, olive oil, garlic, salt, and pepper. Toss until evenly coated.
- Spread vegetables in a single layer on the prepared baking sheet.
- Roast for 15-20 minutes, stirring halfway through, until tender and lightly browned.
- Remove from oven and drizzle with lemon juice if desired. Serve warm.
