Ingredients
- 8 oz high-quality dark chocolate (70% cacao), finely chopped
- 1/2 cup heavy cream
- 1/4 cup raspberry puree (strained)
- 1 tsp rose water
- 1/4 cup unsweetened cocoa powder
- 1/4 cup crushed freeze-dried raspberries
- Pinch of sea salt
Instructions
- Heat the heavy cream in a small saucepan until just simmering, then pour over the chopped chocolate in a bowl. Let sit for 2 minutes, then stir until smooth.
- Stir in the raspberry puree, rose water, and sea salt until fully combined. Cover and refrigerate for 2 hours or until firm.
- Scoop tablespoon-sized portions of the mixture and roll into balls. Roll in cocoa powder or crushed freeze-dried raspberries to coat. Store in the refrigerator until ready to serve.
