Description

A speedy twist on classic French onion soup, these juicy meatballs are simmered in a rich, savory onion gravy and topped with melted Gruyère cheese for a comforting meal.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 large yellow onions, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 cup shredded Gruyère cheese


Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, salt, and pepper. Mix gently and form into 20 small meatballs.
  2. Heat olive oil in a large skillet over medium-high heat. Add meatballs and brown on all sides, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, melt butter over medium heat. Add sliced onions and cook, stirring occasionally, until deeply caramelized, about 15 minutes.
  4. Sprinkle flour over the onions and stir for 1 minute. Gradually whisk in beef broth, Worcestershire sauce, and thyme. Bring to a simmer.
  5. Return meatballs to the skillet. Cover and simmer for 10 minutes, until meatballs are cooked through.
  6. Preheat broiler. Transfer meatballs and gravy to an oven-safe dish. Top with shredded Gruyère cheese. Broil until cheese is melted and bubbly, about 2-3 minutes.

Notes

You can customize the seasonings to taste. For extra richness, add a splash of white wine when deglazing the pan.
