Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup white chocolate chips
- 1 cup roasted pistachios, roughly chopped
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then mix in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in white chocolate chips and chopped pistachios until evenly distributed throughout the dough.
- Scoop dough into 2-tablespoon portions, place on prepared baking sheets about 2 inches apart, and bake for 10-12 minutes until edges are golden but centers are still soft.
- Let cookies cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
