Description

Buttery, bakery-style cookies with crisp edges, chewy centers, and roasted pistachios.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup roasted pistachios, roughly chopped


Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then mix in vanilla extract.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  4. Fold in white chocolate chips and chopped pistachios until evenly distributed throughout the dough.
  5. Scoop dough into 2-tablespoon portions, place on prepared baking sheets about 2 inches apart, and bake for 10-12 minutes until edges are golden but centers are still soft.
  6. Let cookies cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
