Description

Fresh strawberries are coated in a sweet pistachio crust, skewered, and served over creamy whipped feta with a tangy cranberry drizzle. A perfect balance of sweet, salty, and tart flavors for a stunning appetizer or dessert.


Ingredients

  • 16 large fresh strawberries, hulled
  • 1/2 cup shelled pistachios, finely chopped
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 8 wooden or metal skewers
  • 1 cup crumbled feta cheese
  • 1/2 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1/4 cup dried cranberries
  • 1/4 cup orange juice
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • Salt and black pepper to taste


Instructions

  1. In a small bowl, mix the chopped pistachios, 2 tablespoons honey, and olive oil until well combined. Set aside.
  2. Brush each strawberry with a light coating of the pistachio mixture, pressing gently to adhere. Thread 4 strawberries onto each skewer.
  3. Heat a grill or grill pan over medium-high heat. Grill the skewers for 1-2 minutes per side, just until lightly charred and the pistachios are fragrant. Remove from heat and set aside.
  4. In a food processor, combine the feta, Greek yogurt, and lemon juice. Blend until smooth and creamy. Season with salt and pepper to taste. Spread the whipped feta onto a serving platter.
  5. In a small saucepan, combine the dried cranberries, orange juice, balsamic vinegar, and 1 teaspoon honey. Bring to a simmer over medium heat and cook for 5-7 minutes, until the cranberries are soft and the mixture has thickened slightly. Remove from heat and let cool slightly.
  6. Place the grilled strawberry skewers on top of the whipped feta. Drizzle with the cranberry mixture and serve immediately.

Notes

You can customize the seasonings to taste. For a sweeter drizzle, add more honey. If you don’t have a grill, you can roast the skewers in a hot oven for 5 minutes.
