Description

Juicy pear cubes are coated in a crunchy pistachio crust, then grilled or broiled until caramelized. Served on skewers with a luscious whipped brie and a sweet-tart cherry honey drizzle. A perfect appetizer or dessert that balances creamy, nutty, and fruity flavors.


Ingredients

  • 2 ripe but firm pears (such as Bosc or Anjou), cored and cut into 1-inch cubes
  • 1/2 cup shelled pistachios, finely chopped
  • 2 tablespoons honey, plus 2 tablespoons for cherry honey
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 cup brie (rind removed), at room temperature
  • 1/4 cup heavy cream
  • 1/4 cup dried cherries, chopped
  • 1 tablespoon cherry juice or water
  • Fresh mint leaves for garnish (optional)
  • Wooden skewers, soaked in water for 30 minutes if grilling


Instructions

  1. In a shallow bowl, combine the chopped pistachios, 2 tablespoons honey, cinnamon, and salt. Mix well.
  2. Coat each pear cube in the pistachio mixture, pressing to adhere. If needed, brush pears with a little extra honey to help the crust stick.
  3. Thread the pear cubes onto skewers, leaving a little space between each cube.
  4. Preheat a grill or broiler to medium-high heat. Grill or broil the skewers for 2-3 minutes per side, until the pistachios are golden and the pears are slightly caramelized. Remove from heat and set aside.
  5. Place the brie in a small food processor or bowl. Add the heavy cream and blend or whip until smooth and airy. If too thick, add a teaspoon of cream at a time until desired consistency.
  6. In a small saucepan, combine the remaining 2 tablespoons honey, dried cherries, and cherry juice (or water). Heat over low for 3-4 minutes, stirring until the cherries are plump and the mixture is syrupy.
  7. To serve, spread a dollop of whipped brie on a serving platter or individual plates. Top with the pistachio-crusted pear skewers. Drizzle with the cherry honey. Garnish with mint leaves if desired.
  8. Serve immediately.

Notes

You can customize the seasonings to taste. For a touch of warmth, add a pinch of nutmeg or cardamom to the pistachio coating. If you prefer a raw version, skip the grilling or broiling step and serve the skewers fresh.
