Description
A sophisticated appetizer featuring caramelized pear skewers coated in crushed pistachios, served alongside silky whipped brie and drizzled with a sweet-tart cherry honey.
Ingredients
- 2 firm Bosc pears, cored and cut into 1-inch chunks
- 1 cup shelled pistachios, finely chopped
- 8-10 wooden skewers, soaked in water
- 8 oz brie cheese, rind removed and softened
- 2 tbsp heavy cream
- 2 tbsp honey
- 1 tbsp cherry preserves
- 1 tsp fresh lemon juice
- Pinch of sea salt
- Freshly ground black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Thread pear chunks onto soaked skewers. Roll each skewer in crushed pistachios, pressing gently to adhere. Place on prepared baking sheet.
- Bake skewers for 10-12 minutes, until pears are tender and pistachios are lightly toasted.
- While skewers bake, whip the softened brie with heavy cream using a hand mixer or whisk until smooth and fluffy, about 2-3 minutes. Season with a pinch of salt and pepper.
- In a small bowl, stir together honey, cherry preserves, and lemon juice to make the cherry honey.
- To serve, spread a dollop of whipped brie on a plate, top with a warm pear skewer, and drizzle with cherry honey.
