Sweet, savory, and elegant, these skewers feature juicy pear wedges coated in a crunchy pistachio crust, paired with creamy whipped brie and a tart cherry honey drizzle. A perfect appetizer for fall gatherings or a sophisticated starter.
Ingredients
- 2 ripe but firm pears (such as Bosc or Anjou), cored and cut into 1-inch wedges
- 1 cup shelled pistachios, finely chopped
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup all-purpose flour
- 8 oz brie cheese, rind removed, at room temperature
- 1/4 cup heavy cream
- 1 tablespoon honey
- 1/2 cup dried cherries, chopped
- 3 tablespoons honey (for the cherry honey)
- 2 tablespoons water
- 1 tablespoon lemon juice
- 8 wooden or metal skewers (if wooden, soak in water for 30 minutes)
- Vegetable oil for frying
Instructions
- In a small bowl, combine the whisked eggs with a splash of water. In a separate shallow dish, mix the chopped pistachios, panko breadcrumbs, salt, and pepper. Place the flour in another shallow dish.
- Coat each pear wedge in flour, dip into the egg mixture, then press into the pistachio-panko mixture, ensuring an even coating. Place the coated wedges on a plate or tray.
- Heat about 1 inch of vegetable oil in a large skillet over medium heat. Fry the pear wedges in batches until golden brown and crispy, about 2-3 minutes per side. Transfer to a paper towel-lined plate to drain.
- In another bowl, combine the brie, heavy cream, and 1 tablespoon of honey. Beat with an electric mixer until smooth and fluffy. Set aside.
- In a small saucepan, combine the dried cherries, 3 tablespoons of honey, water, and lemon juice. Cook over low heat for 5-7 minutes until the cherries are plumped and the mixture has formed a syrupy sauce. Remove from heat.
- To assemble, thread 2-3 coated pear wedges onto each skewer. Dollop or pipe a generous amount of whipped brie onto a serving platter, arrange the skewers on top, and drizzle with the cherry honey. Serve immediately.
Notes
You can customize the seasonings to taste. For a richer flavor, use raw honey. If you prefer a less sweet sauce, reduce the honey to 2 tablespoons.
