Description
These elegant skewers feature tender roasted carrots coated in a crunchy pistachio crust, served over creamy whipped feta and finished with a tangy-sweet cranberry drizzle. A perfect vegetarian appetizer or side dish that’s as beautiful as it is delicious.
Ingredients
- 8 medium carrots, peeled and halved crosswise
- 2 tablespoons olive oil, divided
- Salt and black pepper to taste
- 1/2 cup shelled pistachios, finely chopped
- 1/4 cup panko breadcrumbs
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1 large egg, beaten
- 8 wooden skewers, soaked in water for 30 minutes
- 1 cup crumbled feta cheese
- 1/2 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1/2 cup fresh or frozen cranberries
- 2 tablespoons maple syrup
- 1 tablespoon water
- 1 teaspoon balsamic vinegar
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss carrot halves with 1 tablespoon olive oil, salt, and pepper. Roast for 20 minutes until tender but still slightly firm. Let cool for 5 minutes.
- Meanwhile, in a shallow bowl, combine chopped pistachios, panko, smoked paprika, garlic powder, and a pinch of salt. In another bowl, beat the egg.
- Insert a soaked skewer into each cooled carrot half, pushing through the center. Dip each carrot into the egg, then roll in the pistachio mixture, pressing gently to adhere.
- Place coated skewers on the prepared baking sheet. Drizzle with remaining 1 tablespoon olive oil. Roast for 12-15 minutes until golden and crispy.
- While skewers roast, make the whipped feta: In a food processor, combine feta, Greek yogurt, and lemon juice. Blend until smooth and creamy. Set aside.
- For the cranberry drizzle: In a small saucepan, combine cranberries, maple syrup, and water. Cook over medium heat until cranberries burst and sauce thickens, about 5 minutes. Remove from heat and stir in balsamic vinegar.
- To serve, spread a generous layer of whipped feta on a platter. Arrange the pistachio-crusted carrot skewers on top. Drizzle with the cranberry sauce and garnish with fresh mint leaves if desired.
Notes
You can customize the seasonings to taste. For extra crunch, double-coat the carrots by repeating the egg and pistachio steps. Soaking the skewers prevents burning.
