Description

Deliciously creamy Brie cheese encased in a crunchy pistachio crust, baked to perfection and drizzled with a sweet-tart raspberry honey glaze. Perfect as an appetizer or party snack.

Ingredients

  • 1 wheel Brie cheese (about 8 oz), chilled
  • 1/2 cup shelled pistachios, finely chopped
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • 1/2 cup panko breadcrumbs
  • 1/2 cup raspberry jam
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • Fresh raspberries for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Cut the chilled Brie into bite-sized cubes or small wedges, about 1-inch pieces.
  3. Set up a breading station: Place flour in one shallow bowl, beaten egg in another, and mix the chopped pistachios with panko breadcrumbs in a third bowl.
  4. Coat each Brie piece first in flour, then dip in egg, and finally roll in the pistachio-panko mixture until evenly coated. Place on the prepared baking sheet.
  5. Bake for 10-12 minutes until the crust is golden and the Brie is soft but not melted completely.
  6. While the Brie bakes, combine raspberry jam, honey, and balsamic vinegar in a small saucepan over low heat. Stir until smooth and slightly thickened, about 3-4 minutes. Remove from heat.
  7. Arrange the baked Brie bites on a serving platter. Drizzle with the raspberry honey glaze and top with fresh raspberries if desired. Serve warm.

Notes

You can customize the seasonings to taste. For extra crunch, toast the pistachios before chopping. The glaze can be made ahead and reheated gently.
