Description

Decadent and elegant appetizer bites featuring creamy brie cheese encased in a crunchy pistachio crust, drizzled with a sweet-tart raspberry honey glaze.


Ingredients

  • 8 oz brie cheese, rind removed
  • 1/2 cup shelled pistachios, finely chopped
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • 1/2 cup panko breadcrumbs
  • 1/4 cup raspberry preserves
  • 1 tablespoon honey
  • 1 teaspoon fresh lemon juice
  • Salt and pepper to taste
  • Olive oil for frying


Instructions

  1. Cut the brie into 1-inch cubes.
  2. Set up a breading station: place flour in one bowl, beaten egg in another, and combine chopped pistachios with panko breadcrumbs in a third bowl.
  3. Coat each brie cube in flour, dip into egg, then coat with pistachio-panko mixture, pressing gently to adhere.
  4. In a small saucepan over medium-low heat, combine raspberry preserves, honey, and lemon juice. Stir until smooth and slightly thickened, about 2-3 minutes. Remove from heat.
  5. Heat a thin layer of olive oil in a skillet over medium heat. Fry the brie bites for 1-2 minutes per side until golden and crisp, being careful not to overheat (cheese should remain soft inside).
  6. Drain on paper towels. Drizzle with raspberry honey glaze and serve warm.
