Description

Creamy brie cheese is coated in crunchy pistachios, baked until warm and gooey, then drizzled with a sweet-tart raspberry honey glaze. These elegant bite-sized appetizers are perfect for parties and gatherings.


Ingredients

  • 1 wheel (8 ounces) Brie cheese, chilled
  • 1 cup shelled pistachios, finely chopped
  • 1 large egg, beaten
  • 2 tablespoons all-purpose flour
  • 1/2 cup seedless raspberry jam
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • Fresh raspberries and mint leaves for garnish (optional)


Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Cut the chilled Brie into 1-inch cubes. You should get about 12-16 bites.
  3. Place flour in a small bowl. Dip each Brie cube into the flour, shaking off excess. Then dip into the beaten egg, and roll in the chopped pistachios, pressing gently to adhere.
  4. Place the coated Brie bites on the prepared baking sheet. Bake for 8-10 minutes, until the cheese is soft and the coating is lightly golden.
  5. Meanwhile, make the glaze: In a small saucepan, combine raspberry jam, honey, and balsamic vinegar. Heat over medium-low, stirring until smooth and slightly thickened, about 3-4 minutes.
  6. Remove Brie bites from oven and let cool for 2 minutes. Drizzle with the raspberry honey glaze. Garnish with fresh raspberries and mint if desired. Serve warm.

Notes

You can customize the seasonings to taste. For a spicier kick, add a pinch of cayenne pepper to the pistachio coating.
